- Chickpeas (canned, drained and rinsed) - 1 cup
- Red bell pepper - 1, sliced
- Zucchini - 1 medium, sliced
- Red onion - 1 small, sliced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Hummus - 1/2 cup
- Fresh spinach - 1 cup
Steps
- Preheat a grill or grill pan over medium heat.
- In a mixing bowl, combine sliced red bell pepper, zucchini, and red onion with olive oil, cumin, paprika, salt, and black pepper. Toss until vegetables are well coated.
- Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
- While the vegetables are grilling, warm the tortillas in a separate pan for about 1 minute on each side.
- Once the vegetables are grilled, remove them from the heat and let them cool slightly.

- Cut the wraps in half and serve immediately or wrap in foil for a midnight snack later.
