  • Whole wheat tortillas - 2
  • Chickpeas (canned, drained and rinsed) - 1 cup
  • Red bell pepper - 1, sliced
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Hummus - 1/2 cup
  • Fresh spinach - 1 cup

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. In a mixing bowl, combine sliced red bell pepper, zucchini, and red onion with olive oil, cumin, paprika, salt, and black pepper. Toss until vegetables are well coated.
  3. Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
  4. While the vegetables are grilling, warm the tortillas in a separate pan for about 1 minute on each side.
  5. Once the vegetables are grilled, remove them from the heat and let them cool slightly.
