- Zucchini (sliced) - 1 medium
- Red onion (sliced) - 1 small
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh spinach leaves - 1 cup
- Hummus - 4 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the grill or grill pan over medium-high heat.
- In a bowl, combine the sliced bell pepper, zucchini, and red onion with olive oil, garlic powder, paprika, salt, and black pepper. Toss to coat the vegetables evenly.
- Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally until they are tender and have grill marks.
