  • Bell pepper (mixed colors, sliced) - 1 cup
  • Zucchini (sliced) - 1 medium
  • Red onion (sliced) - 1 small
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh spinach leaves - 1 cup
  • Hummus - 4 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the grill or grill pan over medium-high heat.
  2. In a bowl, combine the sliced bell pepper, zucchini, and red onion with olive oil, garlic powder, paprika, salt, and black pepper. Toss to coat the vegetables evenly.
  3. Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally until they are tender and have grill marks.
  4. While the vegetables are grilling, in a separate bowl, mix the chickpeas with lemon juice and a pinch of salt and pepper.
  5. Once the vegetables are cooked, remove them from the grill and let cool slightly.
