- Zucchini - 1 medium, sliced
- Red bell pepper - 1, cut into strips
- Yellow bell pepper - 1, cut into strips
- Red onion - 1 medium, sliced
- Cherry tomatoes - 1 cup, halved
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Chickpeas - 1 cup, cooked and drained
- Lentils - 1 cup, cooked
- Fresh spinach - 2 cups, packed
- Feta cheese - 100 grams, crumbled (optional)
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the grill or grill pan over medium heat.
- In a large bowl, toss the zucchini, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes with 2 tablespoons of olive oil, salt, black pepper, and cumin.
- Place the vegetables on the grill and cook for about 10-12 minutes, turning occasionally, until they are tender and have grill marks.
- While the vegetables are grilling, combine the cooked chickpeas, lentils, and spinach in a separate large bowl.
- Once the vegetables are done, remove them from the grill and let them cool slightly before adding them to the chickpea and lentil mixture.
- Add the remaining tablespoon of olive oil, lemon juice, feta cheese (if using), and fresh parsley to the salad, and toss everything together until well combined.
