Ingredients

  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1, diced
  • Yellow bell pepper - 1, diced
  • Red onion - 1 small, sliced
  • Cherry tomatoes - 1 cup, halved
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Chickpeas - 1 can (400g), drained and rinsed
  • Cooked lentils - 1 cup
  • Fresh spinach - 2 cups, washed and dried
  • Lemon juice - 2 tablespoons
  • Feta cheese - 50g, crumbled (optional)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. In a large bowl, combine the sliced zucchini, diced red and yellow bell peppers, sliced red onion, and halved cherry tomatoes.
  3. Drizzle with 1 tablespoon of olive oil, and season with salt, black pepper, and cumin. Toss to coat evenly.
  4. Place the vegetables on the grill and cook for about 8-10 minutes, turning occasionally, until they are tender and have grill marks.
  5. While the vegetables are grilling, prepare the salad base by combining the cooked lentils, drained chickpeas, and fresh spinach in a large bowl.
  6. Once the vegetables are done, remove them from the grill and let them cool slightly before adding them to the lentil and spinach mixture.
  7. Drizzle the salad with the remaining tablespoon of olive oil and lemon juice, and toss to combine.
