- Zucchini - 1 medium, sliced
- Red bell pepper - 1, diced
- Yellow bell pepper - 1, diced
- Red onion - 1 small, sliced
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 1 cup, cooked or canned, drained and rinsed
- Lentils - 1/2 cup, cooked
- Fresh spinach - 2 cups, packed
- Feta cheese - 50 grams, crumbled (optional)
- Balsamic vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the grill or grill pan over medium heat.
- In a large bowl, toss the sliced zucchini, diced red and yellow bell peppers, and sliced red onion with 1 tablespoon of olive oil, salt, and black pepper.
- Once the grill is hot, add the vegetables and grill for about 5-7 minutes on each side or until they are tender and have nice grill marks.
- While the vegetables are grilling, in a separate bowl, combine the cooked chickpeas, lentils, fresh spinach, minced garlic, and balsamic vinegar.
- Once the vegetables are grilled, remove them from the grill and chop them into bite-sized pieces.
- Add the grilled vegetables to the chickpea and lentil mixture, and toss everything together until well combined.
- Serve the salad warm or at room temperature, topped with crumbled feta cheese and chopped parsley.
