Ingredients

  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1, diced
  • Yellow bell pepper - 1, diced
  • Red onion - 1 small, sliced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 1 cup, cooked or canned, drained and rinsed
  • Lentils - 1/2 cup, cooked
  • Fresh spinach - 2 cups, packed
  • Feta cheese - 50 grams, crumbled (optional)
  • Balsamic vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the grill or grill pan over medium heat.
  2. In a large bowl, toss the sliced zucchini, diced red and yellow bell peppers, and sliced red onion with 1 tablespoon of olive oil, salt, and black pepper.
  3. Once the grill is hot, add the vegetables and grill for about 5-7 minutes on each side or until they are tender and have nice grill marks.
  4. While the vegetables are grilling, in a separate bowl, combine the cooked chickpeas, lentils, fresh spinach, minced garlic, and balsamic vinegar.
  5. Once the vegetables are grilled, remove them from the grill and chop them into bite-sized pieces.
  6. Add the grilled vegetables to the chickpea and lentil mixture, and toss everything together until well combined.
  7. Serve the salad warm or at room temperature, topped with crumbled feta cheese and chopped parsley.
