Ingredients

  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, cut into wedges
  • Cherry tomatoes - 1 cup
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/2 teaspoon
  • Chickpeas - 1 cup, cooked or canned, drained
  • Lentils - 1/2 cup, cooked
  • Fresh spinach - 2 cups, chopped
  • Feta cheese - 50 grams, crumbled (optional)
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the sliced red bell pepper, zucchini, red onion, and cherry tomatoes. Drizzle with 1 tablespoon of olive oil, salt, black pepper, and cumin. Toss to coat.
  3. Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally until they are tender and have grill marks.
  4. While the vegetables are grilling, in another bowl, combine the cooked chickpeas, lentils, and chopped spinach. Drizzle with the remaining tablespoon of olive oil and lemon juice, then toss to combine.
  5. Once the vegetables are grilled, remove them from the grill and chop them into bite-sized pieces.
  6. Add the grilled vegetables to the chickpea and lentil mixture, and gently toss everything together.
  7. If using, sprinkle the crumbled feta cheese and chopped parsley on top before serving.
