- Cooked lentils - 1 cup
- Canned chickpeas - 1 cup, drained and rinsed

- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the grill or grill pan over medium-high heat.
- In a large bowl, combine the sliced zucchini, red bell pepper, yellow bell pepper, cherry tomatoes, and red onion.
