- Red onion - 1 small, sliced
- Cherry tomatoes - 1 cup, halved
- Olive oil - 2 tablespoons

- Black pepper - 1/4 teaspoon
- Cooked lentils - 1 cup
- Canned chickpeas - 1 cup, drained and rinsed
- Fresh spinach - 2 cups, roughly chopped
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled (optional)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the grill or grill pan over medium-high heat.
- In a bowl, combine the sliced zucchini, chopped red bell pepper, sliced red onion, and halved cherry tomatoes. Drizzle with 1 tablespoon of olive oil, and season with salt and black pepper. Toss to coat evenly.
