  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, chopped
  • Red onion - 1 small, sliced
  • Cherry tomatoes - 1 cup, halved
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cooked lentils - 1 cup
  • Canned chickpeas - 1 cup, drained and rinsed
  • Fresh spinach - 2 cups, roughly chopped
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the grill or grill pan over medium-high heat.
  2. In a bowl, combine the sliced zucchini, chopped red bell pepper, sliced red onion, and halved cherry tomatoes. Drizzle with 1 tablespoon of olive oil, and season with salt and black pepper. Toss to coat evenly.
