Ingredients

  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1, sliced
  • Carrots - 2 medium, julienned
  • Cherry tomatoes - 1 cup, halved
  • Spinach - 100 grams, fresh
  • Canned chickpeas - 1 can (400g), drained and rinsed
  • Canned lentils - 1 can (400g), drained and rinsed
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Frozen peas - 1/2 cup
  • Lemon - 1, juiced

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. In a large bowl, combine the sliced zucchini, red bell pepper, carrots, and cherry tomatoes.
  3. Drizzle the vegetables with 1 tablespoon of olive oil, minced garlic, cumin, paprika, salt, and pepper. Toss to coat evenly.
  4. Grill the vegetables for 8-10 minutes, turning occasionally until they are tender and have grill marks.
  5. While the vegetables are grilling, heat a small pot over medium heat and add the remaining tablespoon of olive oil.
  6. Add the spinach and sauté until wilted, about 2-3 minutes.
  7. Stir in the drained chickpeas, lentils, and frozen peas, and cook for another 5 minutes until heated through.
  8. Once the vegetables are done, remove them from the grill and let them cool slightly.
  9. In two bowls, layer the chickpea and lentil mixture, followed by the grilled vegetables.
  10. Drizzle with fresh lemon juice before serving.
