- Zucchini - 1 medium, sliced
- Red bell pepper - 1, sliced
- Carrots - 2 medium, julienned
- Cherry tomatoes - 1 cup, halved
- Spinach - 100 grams, fresh
- Canned chickpeas - 1 can (400g), drained and rinsed
- Canned lentils - 1 can (400g), drained and rinsed
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Frozen peas - 1/2 cup
- Lemon - 1, juiced
Steps
- Preheat the grill or a grill pan over medium heat.
- In a large bowl, combine the sliced zucchini, red bell pepper, carrots, and cherry tomatoes.
- Drizzle the vegetables with 1 tablespoon of olive oil, minced garlic, cumin, paprika, salt, and pepper. Toss to coat evenly.
- Grill the vegetables for 8-10 minutes, turning occasionally until they are tender and have grill marks.
- While the vegetables are grilling, heat a small pot over medium heat and add the remaining tablespoon of olive oil.
- Add the spinach and sauté until wilted, about 2-3 minutes.
- Stir in the drained chickpeas, lentils, and frozen peas, and cook for another 5 minutes until heated through.
- Once the vegetables are done, remove them from the grill and let them cool slightly.
- In two bowls, layer the chickpea and lentil mixture, followed by the grilled vegetables.
