- Cherry tomatoes - 1 cup, halved

- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Chickpeas - 1 can (400g), drained and rinsed
- Cooked lentils - 1 cup
- Fresh spinach - 2 cups, packed
- Lemon juice - 1 tablespoon
- Feta cheese - 50g, crumbled (optional)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the grill or grill pan over medium-high heat.
- In a large bowl, combine the zucchini, red bell pepper, yellow bell pepper, red onion, cherry tomatoes, olive oil, salt, black pepper, cumin, and paprika. Toss well to coat.
- Place the vegetables on the grill and cook for about 10-12 minutes, turning occasionally until they are tender and slightly charred.
- While the vegetables are grilling, in a separate pot, heat the cooked lentils with a splash of water over medium heat until warmed through.
- In a large serving bowl, combine the warm lentils, grilled vegetables, chickpeas, and fresh spinach. Drizzle with lemon juice and toss gently to mix.
- Serve the bowl warm, topped with crumbled feta cheese and garnished with fresh parsley.
