Ingredients

  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, chopped
  • Yellow bell pepper - 1 medium, chopped
  • Red onion - 1 medium, sliced
  • Cherry tomatoes - 1 cup, halved
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Chickpeas - 1 can (400g), drained and rinsed
  • Cooked lentils - 1 cup
  • Fresh spinach - 2 cups, packed
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50g, crumbled (optional)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the grill or grill pan over medium-high heat.
  2. In a large bowl, combine the zucchini, red bell pepper, yellow bell pepper, red onion, cherry tomatoes, olive oil, salt, black pepper, cumin, and paprika. Toss well to coat.
  3. Place the vegetables on the grill and cook for about 10-12 minutes, turning occasionally until they are tender and slightly charred.
