Ingredients

  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1, chopped
  • Yellow bell pepper - 1, chopped
  • Red onion - 1 medium, sliced
  • Cherry tomatoes - 1 cup, halved
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Chickpeas - 1 can (400g), drained and rinsed
  • Lentils - 1/2 cup, dry
  • Spinach - 2 cups, fresh
  • Lemon juice - 2 tablespoons
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the sliced zucchini, chopped bell peppers, sliced red onion, and halved cherry tomatoes.
  3. Drizzle the vegetables with olive oil, and season with salt, black pepper, and garlic powder. Toss to coat evenly.
  4. Place the seasoned vegetables on the grill and cook for about 10-12 minutes, turning occasionally until they are tender and slightly charred.
  5. While the vegetables are grilling, rinse the dry lentils and cook them according to package instructions, typically simmering in water for about 20 minutes until tender. Drain any excess water.
  6. In a separate pan, sauté the fresh spinach over medium heat until wilted, about 3-4 minutes, then add the cooked lentils, chickpeas, lemon juice, cumin, and paprika. Stir to combine and heat through for another 2-3 minutes.
  7. To serve, divide the lentil and chickpea mixture between two bowls, top with the grilled vegetables, and garnish with chopped parsley.
