- Tri-tip beef - 500 grams
- Olive oil - 2 tablespoons

- Thyme - 1 tablespoon, chopped
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, paprika, salt, black pepper, and lemon juice to create a marinade.
- Place the tri-tip in a resealable plastic bag or a shallow dish and pour the marinade over the meat, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours.
- Preheat your grill to medium-high heat (about 200°C).
- Remove the tri-tip from the marinade and let it come to room temperature for about 15 minutes.
- Place the tri-tip on the grill and sear for 5-7 minutes on each side to create a nice crust.
- Reduce the heat to medium (about 180°C) and continue grilling for an additional 15-20 minutes, or until the internal temperature reaches 54-57°C for medium-rare.
- Remove the tri-tip from the grill and let it rest for 10 minutes before slicing against the grain.
- Serve with your favorite sides.
