- Shrimp - 300 grams, peeled and deveined
- Bell pepper - 1 medium, diced (any color)
- Zucchini - 1 medium, sliced
- Red onion - 1 small, sliced
- Cherry tomatoes - 200 grams, halved
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, combine the shrimp, 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and black pepper. Marinate for 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- While the grill heats up, prepare the vegetables by tossing the diced bell pepper, sliced zucchini, and red onion with the remaining olive oil and a pinch of salt.
- Grill the marinated shrimp for about 2-3 minutes on each side, or until they turn pink and are cooked through. Remove and set aside.
