Ingredients

  • Shrimp - 300 grams, peeled and deveined
  • Quinoa - 150 grams, rinsed
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1, diced
  • Red onion - 1/4, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, combine the shrimp, olive oil, garlic powder, paprika, salt, and black pepper. Toss until the shrimp are well coated.
  3. Thread the shrimp onto skewers and set aside.

  7. Drizzle with lemon juice and toss gently to combine.
  8. Garnish with fresh parsley and serve warm or at room temperature.
