Ingredients

  • Salmon fillets - 250 grams
  • Olive oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small
  • Avocado - 1 medium, diced
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1/4 medium, finely chopped
  • Cilantro - 1/4 cup, chopped
  • Lime wedges - 2, for serving

Steps

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix the olive oil, lime juice, garlic powder, cumin, salt, and black pepper to create a marinade.
  3. Coat the salmon fillets with the marinade and let them sit for 5 minutes.
  4. Place the salmon on the grill and cook for about 5-6 minutes per side, or until the fish flakes easily with a fork.
  5. While the salmon is grilling, prepare the avocado salsa by combining the diced avocado, halved cherry tomatoes, chopped red onion, and cilantro in a bowl. Squeeze some lime juice over the mixture and gently toss.
  6. Once the salmon is cooked, remove it from the grill and let it rest for a couple of minutes before flaking it into bite-sized pieces.
  7. Warm the corn tortillas on the grill for about 30 seconds on each side.
  8. Assemble the tacos by placing flaked salmon on each tortilla, topping with the avocado salsa, and serving with lime wedges.
