- Corn tortillas - 4 small
- Avocado - 1 medium, diced
- Cherry tomatoes - 100 grams, halved
- Red onion - 1/4 medium, finely chopped
- Cilantro - 1/4 cup, chopped
- Lime wedges - 2, for serving
Steps
- Preheat the grill to medium-high heat.
- In a bowl, mix the olive oil, lime juice, garlic powder, cumin, salt, and black pepper to create a marinade.
- Coat the salmon fillets with the marinade and let them sit for 5 minutes.
- Place the salmon on the grill and cook for about 5-6 minutes per side, or until the fish flakes easily with a fork.
- While the salmon is grilling, prepare the avocado salsa by combining the diced avocado, halved cherry tomatoes, chopped red onion, and cilantro in a bowl. Squeeze some lime juice over the mixture and gently toss.
- Once the salmon is cooked, remove it from the grill and let it rest for a couple of minutes before flaking it into bite-sized pieces.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
