  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • mixed salad greens - 150 grams
  • cherry tomatoes - 100 grams, halved
  • cucumber - 1 small, sliced
  • avocado - 1, diced
  • red onion - 1/4 small, thinly sliced
  • lemon juice - 2 tablespoons
  • honey - 1 teaspoon
  • Dijon mustard - 1 teaspoon

Steps

  1. Preheat the grill to medium-high heat.
  2. Rub the salmon fillets with 1 tablespoon of olive oil, salt, and black pepper.
  3. Place the salmon on the grill and cook for about 4-5 minutes on each side or until the fish flakes easily with a fork.
  4. While the salmon is grilling, prepare the salad by combining the mixed greens, cherry tomatoes, cucumber, avocado, and red onion in a large bowl.
  5. In a small bowl, whisk together the remaining olive oil, lemon juice, honey, and Dijon mustard to make the dressing.
  6. Once the salmon is cooked, remove it from the grill and let it rest for a minute before flaking it into large pieces.

  8. Top the salad with the grilled salmon pieces and serve immediately.
