- Asparagus spears - 200g
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper.
- Place the salmon fillets in a shallow dish and brush half of the marinade over the top. Let them marinate for 10 minutes.
- While the salmon is marinating, prepare the asparagus by trimming the tough ends and placing them in a bowl. Drizzle with the remaining marinade and toss to coat.
- Once the grill is hot, place the salmon fillets skin-side down on the grill. Grill for about 5-6 minutes on each side, depending on thickness, until the salmon is cooked through and flakes easily with a fork.
- At the same time, place the asparagus on the grill perpendicular to the grates or in a grill basket. Grill for about 4-5 minutes, turning occasionally, until tender and slightly charred.
- Remove both the salmon and asparagus from the grill and let them rest for a minute before serving.
