Ingredients

  • Fresh pineapple - 1 medium (about 900g)
  • Bell pepper (red or yellow) - 1 medium
  • Red onion - 1 small
  • Olive oil - 2 tablespoons
  • Honey - 1 tablespoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers (wooden or metal) - 4-6

Steps

  1. Preheat the grill to medium-high heat.
  2. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
  3. Cut the fresh pineapple into 2.5 cm cubes, the bell pepper into 2.5 cm squares, and the red onion into wedges.
  4. In a mixing bowl, combine olive oil, honey, ground cinnamon, salt, and black pepper.
  5. Add the pineapple, bell pepper, and red onion to the bowl, tossing to coat the pieces evenly with the marinade.
  6. Thread the marinated pineapple, bell pepper, and red onion onto the skewers, alternating between each ingredient.
  7. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and the pineapple is caramelized.
  8. Remove the skewers from the grill and let them cool for a minute before serving.
