Ingredients

  • Pineapple - 1 medium (about 900g)
  • Brown sugar - 2 tablespoons (30g)
  • Cinnamon - 1 teaspoon (2g)
  • Honey - 1 tablespoon (21g)
  • Lime juice - 1 tablespoon (15ml)
  • Coconut oil - 1 tablespoon (15ml)
  • Salt - a pinch

Steps

  1. Preheat the grill to medium-high heat.
  2. Peel, core, and slice the pineapple into rings, about 1-inch thick.
  3. In a small bowl, mix brown sugar, cinnamon, honey, lime juice, coconut oil, and a pinch of salt to create a marinade.
  4. Brush each pineapple ring generously with the marinade on both sides.
  5. Place the pineapple rings on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple is caramelized.
  6. Remove from the grill and serve warm, optionally garnished with fresh mint.
