Ingredients

  • Chicken breasts - 2 pieces (about 400g)
  • Lemon juice - 60ml (from about 1 large lemon)
  • Olive oil - 30ml
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a bowl, combine lemon juice, olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken, ensuring it is well-coated.
  3. Seal the bag or cover the dish and refrigerate for at least 15 minutes to allow the flavors to infuse (up to 2 hours for more flavor).
  4. Preheat the grill to medium-high heat.
  5. Remove the chicken from the marinade and discard the marinade.
  6. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is cooked through.
  7. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
  8. Garnish with fresh chopped parsley and serve with a side of your favorite keto-friendly vegetables.
