- Eggplant - 1 medium (about 300g)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Ricotta cheese - 100g
- Parmesan cheese - 30g, grated
- Fresh basil - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Cherry tomatoes - 100g, halved
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat your grill to medium-high heat.
- Slice the eggplant lengthwise into 1/2 cm thick slices. Sprinkle both sides with salt and let them sit for 10 minutes to draw out excess moisture.
- Rinse the eggplant slices under cold water to remove excess salt, then pat dry with paper towels.
- Brush both sides of the eggplant slices with olive oil and season with black pepper and garlic powder.
- Grill the eggplant slices for about 3-4 minutes on each side until they are tender and have grill marks.
- In a bowl, combine ricotta cheese, grated Parmesan, chopped basil, and parsley. Mix well.
- Take a grilled eggplant slice and place a spoonful of the cheese mixture at one end. Add a few cherry tomato halves, then roll the eggplant slice tightly around the filling.
- Secure the roll-up with a toothpick if necessary, and repeat with the remaining slices.
- Drizzle the roll-ups with balsamic vinegar before serving.
