Ingredients

  • Boneless, skinless chicken breast - 300 grams
  • Whole wheat tortillas - 2 large (30 cm)
  • Fresh spinach leaves - 50 grams
  • Red bell pepper - 1 medium, sliced
  • Cucumber - 1 medium, sliced
  • Avocado - 1 medium, sliced
  • Greek yogurt - 100 grams
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the grill or grill pan over medium heat.
  2. In a small bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and black pepper to create a marinade.
  3. Coat the chicken breast with the marinade, then let it sit for about 10 minutes.
  4. Grill the chicken for 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let it rest for 5 minutes.
  5. While the chicken rests, prepare the vegetables: slice the red bell pepper, cucumber, and avocado.
  6. Slice the grilled chicken into strips.
  7. Lay out the whole wheat tortillas and spread 50 grams of Greek yogurt on each tortilla.
  8. Layer fresh spinach, grilled chicken strips, sliced bell pepper, cucumber, and avocado on top of the yogurt.
  9. Wrap the tortillas tightly, folding in the sides as you roll them up.
  10. Cut the wraps in half and serve immediately.
