- 2 boneless, skinless chicken breasts - 300 grams
- 1 red bell pepper - 150 grams
- 1 zucchini - 200 grams
- 1 small red onion - 100 grams
- 2 tablespoons olive oil - 30 ml
- 1 teaspoon garlic powder - 5 grams
- 1 teaspoon dried oregano - 5 grams
- Salt - to taste
- Black pepper - to taste
- Juice of 1 lemon - 30 ml
Steps
- In a bowl, mix olive oil, garlic powder, oregano, lemon juice, salt, and black pepper to create a marinade.
- Add the chicken breasts to the marinade, ensuring they are well coated. Let marinate for at least 15 minutes.
- While the chicken is marinating, wash and slice the red bell pepper, zucchini, and red onion into bite-sized pieces.
- Preheat the grill or a grill pan over medium-high heat.
- Once the grill is hot, place the marinated chicken breasts on it and cook for 6-7 minutes on each side or until the internal temperature reaches 75°C (165°F).
- During the last 5 minutes of cooking the chicken, add the sliced vegetables to the grill, turning occasionally until they are tender and slightly charred.
- Remove the chicken and vegetables from the grill, let the chicken rest for a few minutes, then slice.
- Serve the grilled chicken topped with the grilled vegetables.
