Ingredients

  • 2 boneless, skinless chicken breasts - 300 grams
  • 1 red bell pepper - 150 grams
  • 1 zucchini - 200 grams
  • 1 small red onion - 100 grams
  • 2 tablespoons olive oil - 30 ml
  • 1 teaspoon garlic powder - 5 grams
  • 1 teaspoon dried oregano - 5 grams
  • Salt - to taste
  • Black pepper - to taste
  • Juice of 1 lemon - 30 ml

Steps

  1. In a bowl, mix olive oil, garlic powder, oregano, lemon juice, salt, and black pepper to create a marinade.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Let marinate for at least 15 minutes.
  3. While the chicken is marinating, wash and slice the red bell pepper, zucchini, and red onion into bite-sized pieces.
  4. Preheat the grill or a grill pan over medium-high heat.
  5. Once the grill is hot, place the marinated chicken breasts on it and cook for 6-7 minutes on each side or until the internal temperature reaches 75°C (165°F).
  6. During the last 5 minutes of cooking the chicken, add the sliced vegetables to the grill, turning occasionally until they are tender and slightly charred.
  7. Remove the chicken and vegetables from the grill, let the chicken rest for a few minutes, then slice.
  8. Serve the grilled chicken topped with the grilled vegetables.
