Ingredients

  • 2 boneless, skinless chicken breasts - 300 grams
  • 1 tablespoon olive oil - 15 ml
  • 1 teaspoon garlic powder - 5 grams
  • 1 teaspoon smoked paprika - 5 grams
  • Salt - to taste
  • Black pepper - to taste
  • 2 slices whole grain bread - 100 grams
  • 1 ripe avocado - 150 grams
  • 1 tablespoon lemon juice - 15 ml
  • 1 cup mixed greens - 30 grams
  • 1 medium tomato, sliced - 120 grams

Steps

  1. In a bowl, mix olive oil, garlic powder, smoked paprika, salt, and black pepper to create a marinade.
  2. Add the chicken breasts to the marinade and coat well. Let it marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the avocado spread by mashing the avocado in a bowl and mixing in lemon juice, salt, and pepper to taste.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Grill the marinated chicken breasts for 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.
  7. Toast the whole grain bread slices on the grill or in a toaster until golden brown.
  8. Spread the avocado mixture on each slice of bread.
  9. Layer sliced grilled chicken, mixed greens, and tomato slices on one slice of bread, then top with the other slice.
