Ingredients
- Basmati rice - 200 grams
- Chicken breast - 300 grams
- Yogurt - 100 grams
- Onion - 1 medium, thinly sliced
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Cilantro - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Biryani masala - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Olive oil - 2 tablespoons
- Water - 500 milliliters
Steps
- Begin by marinating the chicken: In a bowl, mix yogurt, garlic, ginger, lemon juice, biryani masala, turmeric powder, cumin powder, coriander powder, and salt. Add the chicken breast and coat well. Cover and let it marinate for at least 30 minutes.
- While the chicken marinates, rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add sliced onions and sauté until golden brown. Remove half for garnishing later.
- Add the marinated chicken to the pot with the remaining onions. Cook for about 10-15 minutes, stirring occasionally, until the chicken is cooked through.
- Add the drained rice to the pot, then add 500 milliliters of water, cilantro, mint leaves, and green chili. Stir gently to combine. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot with a lid, and cook for another 15-20 minutes or until the rice is tender and the water is absorbed. Do not lift the lid during cooking.
- Once done, turn off the heat and let it sit covered for another 5 minutes. Fluff the biryani with a fork before serving.
- Serve hot, garnished with the reserved fried onions and enjoy your Grilled Chicken Biryani!
