Ingredients

  • Chicken breast - 300 grams
  • Bell pepper (red) - 1 medium, diced
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix olive oil, garlic powder, paprika, dried oregano, salt, black pepper, and lemon juice to create a marinade.
  3. Cut the chicken breast into even pieces and add it to the marinade, ensuring all pieces are well coated. Let it marinate for 15 minutes.
  4. While the chicken is marinating, prepare the vegetables by tossing diced bell pepper, sliced zucchini, and sliced red onion in a bit of olive oil, salt, and pepper.
  5. Once the chicken is marinated, place it on the grill and cook for about 6-7 minutes per side, or until it reaches an internal temperature of 75°C (165°F).
  6. Add the vegetables to the grill during the last 8-10 minutes of cooking, turning occasionally until they are tender and slightly charred.
  7. Once cooked, remove the chicken and vegetables from the grill and let them rest for a few minutes.
  8. Serve the grilled chicken and veggies on a plate, garnished with chopped fresh parsley.
