Ingredients

  • Chicken breast - 300 grams, cubed
  • Bell pepper (red or yellow) - 1 medium, cut into 1-inch pieces
  • Zucchini - 1 medium, sliced into rounds
  • Red onion - 1 small, cut into wedges
  • Cherry tomatoes - 150 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Quinoa - 150 grams
  • Water - 300 milliliters

Steps

  1. Soak wooden skewers in water for at least 15 minutes to prevent burning.
  2. In a bowl, combine olive oil, lemon juice, garlic powder, oregano, salt, and black pepper to create a marinade.
  3. Add the cubed chicken to the marinade and let it sit for 10 minutes.
  4. In the meantime, rinse the quinoa under cold water and then combine it with 300 milliliters of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and water is absorbed.
  5. Preheat the grill or grill pan over medium-high heat.
  6. Thread the marinated chicken, bell pepper, zucchini, red onion, and cherry tomatoes onto the soaked skewers, alternating between ingredients.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
  8. Serve the grilled skewers over a bed of quinoa.
