- Zucchini - 1 medium, sliced into rounds
- Red onion - 1 small, cut into wedges
- Cherry tomatoes - 150 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Quinoa - 150 grams
- Water - 300 milliliters
Steps
- Soak wooden skewers in water for at least 15 minutes to prevent burning.
- In a bowl, combine olive oil, lemon juice, garlic powder, oregano, salt, and black pepper to create a marinade.
- Add the cubed chicken to the marinade and let it sit for 10 minutes.
- In the meantime, rinse the quinoa under cold water and then combine it with 300 milliliters of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and water is absorbed.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated chicken, bell pepper, zucchini, red onion, and cherry tomatoes onto the soaked skewers, alternating between ingredients.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
- Serve the grilled skewers over a bed of quinoa.
