  • Bell pepper (red and yellow) - 1 medium, cut into 2.5 cm squares
  • Zucchini - 1 small, sliced into 1 cm rounds
  • Red onion - 1 small, cut into wedges
  • Cherry tomatoes - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes prior)

Steps

  1. In a large bowl, combine olive oil, garlic powder, paprika, oregano, salt, black pepper, and lemon juice to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl and let it marinate in the refrigerator for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables by cutting them into the specified sizes.
  4. Once the chicken is marinated, preheat the grill to medium-high heat.
  5. Thread the marinated chicken and vegetables onto the skewers, alternating between chicken and vegetables.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove the skewers from the grill and let them rest for a couple of minutes before serving.
