Ingredients

  • Chicken breast - 250 grams
  • Quinoa - 100 grams
  • Cherry tomatoes - 150 grams
  • Cucumber - 1 medium
  • Red bell pepper - 1 medium
  • Red onion - 1/4 medium
  • Fresh parsley - 1/4 cup, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper to create a marinade.
  3. Add the chicken breast to the marinade, ensuring it's well-coated. Let it marinate for 10-15 minutes.
  4. While the chicken is marinating, rinse the quinoa under cold water and cook it according to package instructions, usually about 15 minutes.
  5. Once cooked, fluff the quinoa with a fork and set aside to cool.
  6. Chop the cherry tomatoes, cucumber, red bell pepper, and red onion into bite-sized pieces.
  7. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 75°C (165°F).
  8. Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
  9. In a large mixing bowl, combine the cooked quinoa, chopped vegetables, and fresh parsley.
  10. Top the salad with the grilled chicken slices and toss gently before serving.
