- Cucumber - 1 medium
- Red bell pepper - 1 medium
- Red onion - 1/4 medium
- Fresh parsley - 1/4 cup, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper to create a marinade.
- Add the chicken breast to the marinade, ensuring it's well-coated. Let it marinate for 10-15 minutes.
- While the chicken is marinating, rinse the quinoa under cold water and cook it according to package instructions, usually about 15 minutes.
- Once cooked, fluff the quinoa with a fork and set aside to cool.
- Chop the cherry tomatoes, cucumber, red bell pepper, and red onion into bite-sized pieces.
- Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 75°C (165°F).
- Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
- In a large mixing bowl, combine the cooked quinoa, chopped vegetables, and fresh parsley.
- Top the salad with the grilled chicken slices and toss gently before serving.
