Ingredients

  • Chicken breast - 250 grams
  • Olive oil - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mixed salad greens - 100 grams
  • Avocado - 1 medium
  • Cherry tomatoes - 100 grams
  • Cucumber - 1/2 medium
  • Red onion - 1/4 medium
  • Feta cheese - 50 grams (optional)
  • Balsamic vinaigrette - 2 tablespoons

Steps

  1. In a bowl, mix together olive oil, lime juice, garlic powder, paprika, salt, and black pepper to create a marinade.
  2. Add the chicken breast to the marinade, ensuring it's well-coated, and let it marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the salad ingredients by washing and chopping the mixed greens, cherry tomatoes, cucumber, and red onion.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C (165°F).
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
  7. Slice the avocado in half, remove the pit, and scoop out the flesh to slice.
  8. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  9. Top the salad with the sliced grilled chicken, avocado, and feta cheese if using.
  10. Drizzle with balsamic vinaigrette and toss gently to combine.
