Steps
- In a small bowl, mix Greek yogurt with garlic powder, salt, and black pepper to create a spread.
- Spread the yogurt mixture on one side of each slice of whole grain bread.
- Layer sharp cheddar and mozzarella cheese evenly on two slices of bread, on the yogurt-spread side.
- Top the cheese with fresh spinach, then place the other two slices of bread on top, yogurt-side down.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of butter, allowing it to melt.
- Carefully place the sandwiches in the skillet and grill until golden brown, about 3-4 minutes.
- Add the remaining butter to the skillet, flip the sandwiches, and grill the other side until golden and the cheese is melted, about another 3-4 minutes.
- Remove from heat, let it cool for a minute, then slice and serve.
