Ingredients

  • Mozzarella cheese - 100 grams, sliced
  • Greek yogurt - 2 tablespoons
  • Butter - 2 tablespoons
  • Spinach - 1 cup, fresh
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a small bowl, mix Greek yogurt with garlic powder, salt, and black pepper to create a spread.
  2. Spread the yogurt mixture on one side of each slice of whole grain bread.
  3. Layer sharp cheddar and mozzarella cheese evenly on two slices of bread, on the yogurt-spread side.
  4. Top the cheese with fresh spinach, then place the other two slices of bread on top, yogurt-side down.
  5. Heat a non-stick skillet over medium heat and add 1 tablespoon of butter, allowing it to melt.
  6. Carefully place the sandwiches in the skillet and grill until golden brown, about 3-4 minutes.
  7. Add the remaining butter to the skillet, flip the sandwiches, and grill the other side until golden and the cheese is melted, about another 3-4 minutes.
  8. Remove from heat, let it cool for a minute, then slice and serve.
