  • Fresh green beans - 200 grams
  • Mushrooms (sliced) - 150 grams
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Vegetable broth - 250 ml
  • Coconut milk - 100 ml
  • All-purpose flour - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Breadcrumbs - 30 grams
  • Black pepper - to taste
  • Salt - to taste
  • French fried onions (for topping) - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Trim the ends of the green beans and blanch them in boiling water for 3-4 minutes until bright green. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are tender, about 5-7 minutes.
  5. Sprinkle the flour over the mushroom mixture, stirring to combine. Gradually pour in the vegetable broth and coconut milk, stirring continuously until the mixture thickens.
  6. Stir in nutritional yeast, soy sauce, black pepper, and salt. Add the blanched green beans to the mushroom sauce, mixing until well combined.
  7. Transfer the green bean mixture to a small baking dish. Top with breadcrumbs and French fried onions.
  8. Bake in the preheated oven for 15-20 minutes, or until the top is golden and crispy.
  9. Remove from the oven and let it cool slightly before serving.
