- Fresh green beans - 200 grams
- Mushrooms (sliced) - 150 grams
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Vegetable broth - 250 ml
- Coconut milk - 100 ml
- All-purpose flour - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Soy sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Breadcrumbs - 30 grams
- Black pepper - to taste
- Salt - to taste
- French fried onions (for topping) - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- Trim the ends of the green beans and blanch them in boiling water for 3-4 minutes until bright green. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are tender, about 5-7 minutes.
- Sprinkle the flour over the mushroom mixture, stirring to combine. Gradually pour in the vegetable broth and coconut milk, stirring continuously until the mixture thickens.
- Stir in nutritional yeast, soy sauce, black pepper, and salt. Add the blanched green beans to the mushroom sauce, mixing until well combined.
- Transfer the green bean mixture to a small baking dish. Top with breadcrumbs and French fried onions.
- Bake in the preheated oven for 15-20 minutes, or until the top is golden and crispy.
- Remove from the oven and let it cool slightly before serving.
