Ingredients

  • Fresh green beans - 200 grams
  • Almonds (sliced) - 30 grams
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Lemon juice - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley (chopped) - 1 tablespoon

Steps

  1. Trim the ends of the green beans and rinse them under cold water.
  2. In a pot, bring salted water to a boil and blanch the green beans for 3-4 minutes until tender-crisp.
  3. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process.
  4. In a skillet, heat the olive oil over medium heat and add the sliced almonds. Toast the almonds for about 2-3 minutes until they are golden brown, stirring frequently.
  5. Add the minced garlic to the skillet and sauté for another 30 seconds until fragrant.
  6. Drain the green beans from the ice water and add them to the skillet, tossing to combine with the garlic and almonds.
