- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cucumber - 1 medium, diced
- Cherry tomatoes - 200 grams, halved
- Red onion - 1/4 medium, thinly sliced
- Kalamata olives - 50 grams, pitted
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a small bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper to create a marinade.
- Place the chicken breast in a resealable bag or dish and pour the marinade over it. Marinate for at least 15 minutes.
- While the chicken is marinating, prepare the salad by combining diced cucumber, halved cherry tomatoes, sliced red onion, Kalamata olives, crumbled feta cheese, and chopped parsley in a large bowl.
