Ingredients

  • Chicken breast - 200 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1/4 medium, thinly sliced
  • Kalamata olives - 50 grams, pitted
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a small bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper to create a marinade.
  2. Place the chicken breast in a resealable bag or dish and pour the marinade over it. Marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the salad by combining diced cucumber, halved cherry tomatoes, sliced red onion, Kalamata olives, crumbled feta cheese, and chopped parsley in a large bowl.
  4. Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked (internal temperature of 75°C).
