Ingredients

  • Cauliflower - 300 grams (for crust)
  • Egg - 1 large
  • Mozzarella cheese (shredded) - 100 grams
  • Almond flour - 50 grams
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams (halved)
  • Cucumber - 1/2 medium (diced)
  • Red onion - 1/4 small (thinly sliced)
  • Kalamata olives - 50 grams (pitted and halved)
  • Feta cheese - 50 grams (crumbled)
  • Olive oil - 1 tablespoon
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1/2 teaspoon (for dressing)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Grate the cauliflower and steam it for about 5 minutes until tender. Let it cool slightly.
  3. In a bowl, combine the steamed cauliflower, egg, mozzarella cheese, almond flour, oregano, salt, and pepper. Mix until a dough forms.
  4. Spread the cauliflower mixture onto a parchment-lined baking sheet to form a pizza crust, about 1/2 inch thick.
  5. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
  6. While the crust is baking, prepare the Greek salad toppings by combining the cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese in a bowl.
  7. In a small bowl, whisk together olive oil, red wine vinegar, and dried oregano. Pour the dressing over the salad and toss to combine.
