- Almond flour - 50 grams
- Oregano - 1 teaspoon

- Cherry tomatoes - 100 grams (halved)
- Cucumber - 1/2 medium (diced)
- Red onion - 1/4 small (thinly sliced)
- Kalamata olives - 50 grams (pitted and halved)

- Olive oil - 1 tablespoon
- Red wine vinegar - 1 tablespoon
- Dried oregano - 1/2 teaspoon (for dressing)
Steps
- Preheat the oven to 220°C (425°F).
- Grate the cauliflower and steam it for about 5 minutes until tender. Let it cool slightly.
- In a bowl, combine the steamed cauliflower, egg, mozzarella cheese, almond flour, oregano, salt, and pepper. Mix until a dough forms.
- Spread the cauliflower mixture onto a parchment-lined baking sheet to form a pizza crust, about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
- While the crust is baking, prepare the Greek salad toppings by combining the cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese in a bowl.
- In a small bowl, whisk together olive oil, red wine vinegar, and dried oregano. Pour the dressing over the salad and toss to combine.
