- Water - 2 cups (480ml)
- Cucumber - 1 medium, diced
- Cherry tomatoes - 1 cup (150g), halved
- Red bell pepper - 1 medium, diced
- Red onion - 1/4 medium, finely chopped
- Kalamata olives - 1/4 cup (35g), pitted and halved
- Feta cheese - 1/2 cup (75g), crumbled
- Fresh parsley - 1/4 cup (15g), chopped
- Olive oil - 2 tablespoons (30ml)
- Lemon juice - 2 tablespoons (30ml)
- Dried oregano - 1 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
Steps
- Rinse the quinoa under cold water to remove any bitterness.
- In a medium saucepan, combine the quinoa and water, and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed.
- Remove the quinoa from heat and let it sit covered for 5 minutes, then fluff with a fork and let it cool.
- In a large bowl, combine the diced cucumber, cherry tomatoes, red bell pepper, red onion, Kalamata olives, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
- Add the cooled quinoa to the vegetable mixture and drizzle the dressing over the top.
- Toss everything together gently until well combined and serve chilled or at room temperature.
