Ingredients

  • Quinoa - 1 cup (185g)
  • Water - 2 cups (480ml)
  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 1 cup (150g), halved
  • Red bell pepper - 1 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Kalamata olives - 1/4 cup (35g), pitted and halved
  • Feta cheese - 1/2 cup (75g), crumbled
  • Fresh parsley - 1/4 cup (15g), chopped
  • Olive oil - 2 tablespoons (30ml)
  • Lemon juice - 2 tablespoons (30ml)
  • Dried oregano - 1 teaspoon (2g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the quinoa and water, and bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed.
  4. Remove the quinoa from heat and let it sit covered for 5 minutes, then fluff with a fork and let it cool.
  5. In a large bowl, combine the diced cucumber, cherry tomatoes, red bell pepper, red onion, Kalamata olives, feta cheese, and parsley.
  6. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
  7. Add the cooled quinoa to the vegetable mixture and drizzle the dressing over the top.
  8. Toss everything together gently until well combined and serve chilled or at room temperature.
