  • Rolled oats - 1 cup
  • Almonds, chopped - 1/2 cup
  • Pumpkin seeds - 1/4 cup
  • Honey - 2 tablespoons
  • Coconut oil, melted - 2 tablespoons
  • Cinnamon - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Dried cranberries - 1/4 cup
  • Almond milk - 2 cups

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, combine rolled oats, chopped almonds, pumpkin seeds, cinnamon, and salt.
  3. In a separate bowl, mix together honey and melted coconut oil until well combined.
  4. Pour the honey mixture over the dry ingredients and mix until everything is evenly coated.
  5. Spread the granola mixture evenly on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 15-20 minutes, stirring halfway through, until golden brown.
  7. Remove from the oven and let it cool completely before mixing in the dried cranberries.
