Ingredients

  • Rolled oats - 1 cup
  • Almonds, chopped - 1/4 cup
  • Honey - 1/4 cup
  • Peanut butter - 2 tablespoons
  • Chia seeds - 1 tablespoon
  • Dried cranberries - 1/4 cup
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and line an 8x8 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chopped almonds, chia seeds, and salt.
  3. In a small saucepan over low heat, melt the honey and peanut butter together, stirring until smooth.
  4. Remove the saucepan from heat and stir in the vanilla extract.
  5. Pour the melted mixture over the dry ingredients and mix until well combined.
  6. Fold in the dried cranberries until evenly distributed.
  7. Transfer the mixture into the prepared baking dish and press it down firmly with a spatula to create an even layer.
