Ingredients

  • Quinoa - 1 cup (170g)
  • Water - 2 cups (480ml)
  • Cherry tomatoes - 1 cup (150g), halved
  • Cucumber - 1 small (150g), diced
  • Red bell pepper - 1/2 (75g), diced
  • Red onion - 1/4 (40g), finely chopped
  • Parsley - 1/4 cup (10g), chopped
  • Mint - 2 tablespoons (5g), chopped
  • Olive oil - 2 tablespoons (30ml)
  • Lemon juice - 1 tablespoon (15ml)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)

Steps

  1. Rinse the quinoa under cold water to remove bitterness.
  2. In a medium pot, combine the rinsed quinoa and water, bring to a boil.
  3. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed.
  4. Remove from heat and let the quinoa sit, covered, for 5 minutes. Fluff with a fork.
  5. In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  7. Add the cooked quinoa to the vegetable mixture and pour the dressing over it.
  8. Toss gently to combine all ingredients well.
  9. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
