Ingredients
- Quinoa - 1 cup (170g)
- Water - 2 cups (480ml)
- Cherry tomatoes - 1 cup (150g), halved
- Cucumber - 1 small (150g), diced
- Red bell pepper - 1/2 (75g), diced
- Red onion - 1/4 (40g), finely chopped
- Parsley - 1/4 cup (10g), chopped
- Mint - 2 tablespoons (5g), chopped
- Olive oil - 2 tablespoons (30ml)
- Lemon juice - 1 tablespoon (15ml)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
Steps
- Rinse the quinoa under cold water to remove bitterness.
- In a medium pot, combine the rinsed quinoa and water, bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed.
- Remove from heat and let the quinoa sit, covered, for 5 minutes. Fluff with a fork.
- In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Add the cooked quinoa to the vegetable mixture and pour the dressing over it.
- Toss gently to combine all ingredients well.
- Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
