Ingredients

  • Cabbage - 1 medium head
  • Ground beef - 200 grams
  • Cooked quinoa - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato sauce - 200 grams
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of water to a boil. Carefully remove the core from the cabbage head and blanch the whole head in the boiling water for about 5 minutes until the leaves are tender. Remove the cabbage and let it cool.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-5 minutes.
  3. In a large bowl, combine the ground beef, cooked quinoa, sautéed onion and garlic, oregano, paprika, salt, and pepper. Mix well until fully combined.
  4. Once the cabbage is cool enough to handle, gently peel off the leaves. Cut the thick vein at the bottom of each leaf to make rolling easier.
  5. Place about 2-3 tablespoons of the meat mixture at the base of a cabbage leaf. Roll the leaf tightly, tucking in the sides as you go to form a secure package. Repeat until all the mixture is used.
  6. In a baking dish, pour half of the tomato sauce on the bottom. Arrange the stuffed cabbage rolls seam-side down in the dish. Top with the remaining tomato sauce.
  7. Cover the dish with aluminum foil and bake in a preheated oven at 180°C (350°F) for 30-35 minutes.
  8. Remove from the oven, sprinkle with fresh parsley, and let it cool for a few minutes before serving.
