Ingredients

  • Baking powder - 2 teaspoons
  • Salt - 1/4 teaspoon
  • Sugar - 2 tablespoons
  • Milk (dairy or non-dairy) - 3/4 cup (180ml)
  • Egg - 1 large
  • Unsweetened applesauce - 2 tablespoons
  • Butter or coconut oil (melted) - 2 tablespoons
  • Vanilla extract - 1 teaspoon

Steps

  1. In a medium bowl, whisk together the gluten-free flour, baking powder, salt, and sugar until well combined.
  2. In another bowl, mix the milk, egg, applesauce, melted butter or coconut oil, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  5. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
