Ingredients

  • Chicken breast - 250 grams
  • Bell pepper (red) - 1 medium
  • Bell pepper (green) - 1 medium
  • Onion - 1 medium
  • Olive oil - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas (gluten-free) - 4
  • Fresh cilantro (optional) - for garnish

Steps

  1. Slice the chicken breast into thin strips and season with garlic powder, cumin, paprika, salt, and black pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the seasoned chicken strips to the skillet and cook for about 5-7 minutes, or until cooked through and golden brown.
  4. While the chicken is cooking, slice the onion and bell peppers into thin strips.
  5. Once the chicken is cooked, remove it from the skillet and set aside.
  6. In the same skillet, add the remaining tablespoon of olive oil and the sliced onion and bell peppers.
  7. Sauté the vegetables for about 5-7 minutes until they are tender and slightly caramelized.
  8. Return the chicken to the skillet, add lime juice, and stir to combine with the vegetables.
  9. Warm the corn tortillas in a separate pan or microwave for a few seconds until pliable.
  10. Serve the chicken and vegetable mixture in the warm tortillas, garnished with fresh cilantro if desired.
