- Fresh clams - 300 grams, cleaned and chopped
- Gluten-free bacon - 50 grams, diced
- Butter - 15 grams
- Yellow onion - 1 small, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Gluten-free all-purpose flour - 2 tablespoons
- Chicken or vegetable broth - 500 ml
- Potato - 1 medium, peeled and diced
- Heavy cream - 100 ml
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, cook the diced gluten-free bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add butter to the pot and melt. Sauté the onions and celery until they soften, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Sprinkle the gluten-free flour over the vegetables and stir well to combine, cooking for 2-3 minutes to eliminate the raw flour taste.
- Gradually add the chicken or vegetable broth, stirring continuously to avoid lumps. Bring to a simmer.
- Add the diced potatoes and thyme. Cook until the potatoes are tender, about 10-15 minutes.
- Once the potatoes are cooked, add the chopped clams, heavy cream, and the reserved bacon. Stir to combine and heat through for another 5 minutes.
- Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
