Ingredients

  • Fresh clams - 300 grams, cleaned and chopped
  • Gluten-free bacon - 50 grams, diced
  • Butter - 15 grams
  • Yellow onion - 1 small, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Gluten-free all-purpose flour - 2 tablespoons
  • Chicken or vegetable broth - 500 ml
  • Potato - 1 medium, peeled and diced
  • Heavy cream - 100 ml
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, cook the diced gluten-free bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add butter to the pot and melt. Sauté the onions and celery until they soften, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Sprinkle the gluten-free flour over the vegetables and stir well to combine, cooking for 2-3 minutes to eliminate the raw flour taste.
  5. Gradually add the chicken or vegetable broth, stirring continuously to avoid lumps. Bring to a simmer.
  6. Add the diced potatoes and thyme. Cook until the potatoes are tender, about 10-15 minutes.
  7. Once the potatoes are cooked, add the chopped clams, heavy cream, and the reserved bacon. Stir to combine and heat through for another 5 minutes.
  8. Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
