Ingredients
- Chicken breast - 2 pieces (about 200g each)
- Buttermilk - 1 cup (240ml)
- Gluten-free all-purpose flour - 1 cup (120g)
- Cornstarch - 1/4 cup (30g)
- Baking powder - 1 tsp (5g)
- Salt - 1 tsp (5g)
- Black pepper - 1/2 tsp (2g)
- Paprika - 1/2 tsp (2g)
- Egg - 1 large
- Vegetable oil - for frying
- Gluten-free waffle mix - 1 cup (120g)
- Water - 3/4 cup (180ml)
- Maple syrup - for serving
Steps
- In a bowl, marinate the chicken breasts in buttermilk for at least 30 minutes, or up to overnight in the refrigerator.
- In a separate bowl, mix together gluten-free flour, cornstarch, baking powder, salt, black pepper, and paprika.
- Remove the chicken from the buttermilk and let excess drip off. Dredge each piece in the flour mixture until fully coated.
- Heat vegetable oil in a deep skillet over medium heat. Fry the chicken for 6-8 minutes per side or until golden brown and cooked through. Drain on paper towels.
- While the chicken is frying, prepare the waffles by combining the gluten-free waffle mix and water in a bowl until smooth.
- Preheat a waffle iron and lightly grease it. Pour the prepared batter into the iron and cook according to the manufacturer’s instructions until golden and crispy.
- Serve the fried chicken on top of the waffles, drizzled with maple syrup.
