Ingredients

  • Whole wheat flour - 120 grams
  • Baking soda - 1 teaspoon

  • Nutmeg - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Coconut oil - 30 grams, melted
  • Honey - 60 grams
  • Molasses - 30 grams
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon

Steps

  1. Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the whole wheat flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, mix the melted coconut oil, honey, molasses, egg, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Cover the dough with plastic wrap and refrigerate for 15 minutes to firm up.
  6. Roll out the dough on a lightly floured surface to about 1/4 inch thick.
