- Coconut oil - 30 grams, melted
- Honey - 60 grams
- Molasses - 30 grams
- Egg - 1 large
- Vanilla extract - 1 teaspoon
Steps
- Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the whole wheat flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In a separate large bowl, mix the melted coconut oil, honey, molasses, egg, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Cover the dough with plastic wrap and refrigerate for 15 minutes to firm up.
- Roll out the dough on a lightly floured surface to about 1/4 inch thick.
