Ingredients
- Long-grain white rice - 1 cup
- Garlic cloves - 4, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the long-grain white rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the rinsed rice and sauté for an additional 2-3 minutes, allowing the rice to absorb the garlic flavor.
- Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped fresh parsley before serving.
