Ingredients

  • Yukon Gold potatoes - 500 grams
  • Garlic cloves - 4
  • Unsalted butter - 30 grams
  • Milk - 60 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley (for garnish) - 1 tablespoon

Steps

  1. Peel and chop the Yukon Gold potatoes into even-sized chunks.
  2. Place the chopped potatoes in a pot and cover them with cold water. Add 1 teaspoon of salt.
  3. Bring the water to a boil over medium-high heat, then reduce to a simmer and cook the potatoes for about 15-20 minutes, or until they are fork-tender.
  4. While the potatoes are cooking, preheat the oven to 200°C (400°F).
  5. Wrap the garlic cloves (with skin on) in aluminum foil and roast them in the oven for about 15 minutes until soft.
  6. Once the potatoes are done, drain them and return them to the pot.
  7. Add the butter and milk to the potatoes, then squeeze the roasted garlic out of its skin into the pot.
  8. Mash the potatoes with a potato masher or fork until smooth and creamy. Season with black pepper and adjust salt to taste.
  9. Serve warm, garnished with chopped fresh parsley.
