- Yukon Gold potatoes - 500 grams
- Garlic cloves - 4
- Unsalted butter - 30 grams
- Milk - 60 ml
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley (for garnish) - 1 tablespoon
Steps
- Peel and chop the Yukon Gold potatoes into even-sized chunks.
- Place the chopped potatoes in a pot and cover them with cold water. Add 1 teaspoon of salt.
- Bring the water to a boil over medium-high heat, then reduce to a simmer and cook the potatoes for about 15-20 minutes, or until they are fork-tender.
- While the potatoes are cooking, preheat the oven to 200°C (400°F).
- Wrap the garlic cloves (with skin on) in aluminum foil and roast them in the oven for about 15 minutes until soft.
- Once the potatoes are done, drain them and return them to the pot.
- Add the butter and milk to the potatoes, then squeeze the roasted garlic out of its skin into the pot.
- Mash the potatoes with a potato masher or fork until smooth and creamy. Season with black pepper and adjust salt to taste.
- Serve warm, garnished with chopped fresh parsley.
