- Chicken breasts - 2 pieces (about 200g each)
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Fresh thyme - 1 tablespoon, chopped
- Fresh rosemary - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Chicken broth - 100 ml
Steps
- Preheat your oven to 200°C (400°F).
- In a small bowl, mix together olive oil, minced garlic, chopped thyme, rosemary, salt, black pepper, and lemon juice to make a marinade.
- Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them, ensuring they are well coated. Let it marinate for at least 15 minutes.
- Heat a skillet over medium-high heat and add a little olive oil. Once hot, sear the chicken breasts for about 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish and pour the chicken broth around it.
- Bake in the preheated oven for about 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Remove from the oven, let rest for 5 minutes, then serve with the pan juices drizzled over the top.
