Ingredients

  • Chickpeas - 200 grams, cooked
  • Oats - 50 grams, rolled
  • Garlic - 4 cloves, roasted
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Onion - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Spread the peeled garlic cloves on a baking sheet and drizzle with a little olive oil. Roast in the oven for about 15 minutes or until golden and soft.
  3. In a food processor, combine the cooked chickpeas, rolled oats, roasted garlic, parsley, cilantro, onion, cumin, salt, pepper, and lemon juice. Blend until the mixture is well combined but still has some texture.
  4. Form the mixture into two equal-sized patties.
  5. Heat the remaining olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  6. Toast the whole wheat burger buns in the same skillet for 1-2 minutes until lightly golden.
  7. Assemble each burger by spreading 1 tablespoon of vegan mayonnaise on the bottom half of the bun, adding a lettuce leaf, a patty, and a slice of tomato. Top with the other half of the bun and serve.
