  • Garlic - 3 cloves, minced
  • Fresh Thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Olive Oil - 1 tablespoon (15ml)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and dice the sweet potatoes into 1-inch cubes.
  3. In a large mixing bowl, combine the diced sweet potatoes, olive oil, minced garlic, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
  4. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and golden brown, tossing halfway through the cooking time.
