- Fresh Thyme - 1 teaspoon, chopped

- Black Pepper - 1/2 teaspoon
- Olive Oil - 1 tablespoon (15ml)
Steps
- Preheat your oven to 200°C (400°F).
- Peel and dice the sweet potatoes into 1-inch cubes.
- In a large mixing bowl, combine the diced sweet potatoes, olive oil, minced garlic, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and golden brown, tossing halfway through the cooking time.
- While the sweet potatoes are roasting, melt the butter in a small saucepan over low heat and stir in the chopped thyme.
